The Northern Restaurant and Bar 2025 event is just around the corner, and I am really looking forward to attending. As the Business Development Manager at Ginger Hospitality, I have my eye on several exhibitors who are making significant strides in the hospitality industry. Here is a closer look at some of the names I am particularly excited to see and why they have caught my attention.

Mission Mars

Mission Mars is more than just a hospitality operator. It is a multi-concept business that delivers high-quality food, drink, entertainment, and hospitality experiences through a focus on innovation, people, and sustainability. The company has built a reputation for its unique venues, which include Rudy’s Pizza, Albert’s Schloss, and Albert’s Schenke. Each concept brings something distinctive to the table, from authentic Neapolitan pizza to traditional Alpine cuisine.

Albert’s Schloss is particularly noteworthy for its selection of European biers and its dedication to authenticity. The venue imports fresh Pilsner Urquell directly from the Czech Republic to ensure its patrons experience the bier as it is meant to be served. The Cook Haus menu complements the drinks with indulgent Alpine dishes.

Meanwhile, Rudy’s Pizza Napoletana follows true Neapolitan traditions, crafting pizzas with 00 Caputo flour, San Marzano tomatoes, and Fior di Latte. The dough is made fresh daily and cooked for just 60 seconds at high heat to achieve the perfect texture. With locations across the UK, including Manchester, Liverpool, London, and Newcastle, Rudy’s has become a popular choice for pizza enthusiasts.

Albert’s Schenke, with its rustic, Bavarian-inspired dishes and diverse bier selection, adds to Mission Mars’ portfolio. Additionally, the Albert Hall in Manchester, a Grade II listed building, has been transformed into an atmospheric events venue, attracting live music performances and private hire clients alike.

Skof

Skof, a Manchester-based restaurant that opened in May 2024, has quickly gained attention, recently earning its first Michelin star. Founded by Tom Barnes, who has an impressive background in some of the world’s best kitchens, Skof is known for its focus on simplicity, skill, and excellent food. The restaurant, located in the Hanover building in Manchester’s NOMA neighbourhood, offers a relaxed atmosphere with no formal dress codes.

Tom Barnes’ journey in the culinary world has taken him from an apprenticeship in Cumbria to Michelin-starred restaurants like L’Enclume and Geranium in Copenhagen. His team at Skof includes experienced professionals such as restaurant manager Sean Oakford and head chef Conor Dalton, both of whom bring a wealth of industry knowledge to the restaurant.

The team at Skof is passionate about high-quality food and exceptional service. With a menu that prioritises great ingredients and skilful preparation, the restaurant has already become a key player in Manchester’s dining scene.

Why These Exhibitors Stand Out

The exhibitors mentioned here represent different aspects of the hospitality industry but share a common commitment to quality and innovation. Mission Mars continues to expand its portfolio of distinct venues, each with a unique appeal. Skof demonstrates how new establishments can quickly make their mark through a combination of experience, talent, and a clear culinary vision.

Events like the Northern Restaurant and Bar 2025 provide an excellent opportunity to learn from such industry leaders. With innovative concepts and a dedication to delivering memorable hospitality experiences, these exhibitors are sure to attract plenty of interest at this year’s event.

I am eager to engage with these businesses, alongside many others, to gain insights, share ideas, and celebrate the creativity that drives the hospitality sector forward.
