Navigating the Challenges of the UK Gastro Pub Sector: Insights and Solutions for Hospitality Businesses

Colin MacIntyre, Managing DirectorBy Colin Macintyre, Managing Director

The UK gastro pub sector has been a cornerstone of British culture for decades, with over 50,000 pubs and bars across the country. Gastro pubs, in particular, are known for their high-quality food, welcoming atmosphere, and premium drinks selection. However, the industry has been hit by various challenges in recent years, including the cost-of-living crisis and the COVID-19 pandemic leading to a shortage of staff, which has further strained the industry.

How has the Cost-of-Living crisis affected Hospitality?

The cost-of-living crisis in the UK has resulted in an increase in the cost of food, energy, and other essential goods and services. As a result, gastro pubs have struggled to maintain their profit margins, leading to closures and revenue losses. However, industry leaders have implemented cost-saving measures to counter these challenges.

Many gastro pubs across the UK have also taken steps to reduce costs and remain competitive. For example, some have reduced their menu sizes and sourced more seasonal ingredients from local suppliers. These measures can help to maintain profit margins while still offering high-quality food and drink.

What Is the Hospitality industry doing to support itself?

Despite these challenges, the UK gastro-pub sector remains an important part of the country’s hospitality industry. According to a report by AlixPartners, the sector is expected to generate revenue of £20.3 billion in 2023, up from £18.2 billion in 2018. However, to achieve this growth, businesses need to adapt to changing consumer expectations.

Customers are increasingly seeking value for money and high-quality experiences. According to a survey by CGA, 47% of consumers said that they are willing to pay more for high-quality food and drink if balanced with great service. Moreover, 52% said that they would return to a pub if the quality of the service, food and drink was good. Therefore, a strong people plan, investing in the right staff and providing training and development opportunities are crucial to providing excellent customer service and building a positive reputation.

Are permanent staff costing you too much money?

Callum Bamber, Commercial Director
Callum Bamber, Commercial Director

Are you struggling to find and retain top talent for your high-end hospitality establishment? It can be a daunting task to find the right candidates for junior roles such as Chef De Partie’s, FnB Assistant’s and Bartender’s/Mixologist, especially in environments where the talent pool is small.

Unfortunately, many suitable candidates for these roles have a high rate of turnover due to their focus on gaining diverse experience across various locations, cuisines, and environments to pave the way for their future careers. This leads to high turnover rates and skyrocketing recruitment costs.

But don’t worry! There is a solution. By partnering with a reputable temp, you can gain access to skilled temporary staff members who are used to hitting the ground running.

Partnering with us can help you:

  • Reduce onboarding and payroll processing costs – because these candidates are used to working in fast-paced environments, there is no need for extensive training, and the payroll process can be handled by us.
  • Reduce costs associated with turnover – By using temporary staffing to fill gaps in your team, you can reduce the risk of turnover and the associated costs, while ensuring your business stays on track.
  • Save time – According to a survey by CareerBuilder, it takes employers over three weeks to fill a position (and this doesn’t include notice periods). However, temporary staffing agencies can typically fill a position in as little as 24 hours.

The American Staffing Association found that companies save an average of 20% to 30% on labour costs by using temporary workers. On top of this a separate study by Oxford Economics showed that for every pound spent on temporary staffing, the business saw a return of £1.70 in increased output and revenue.  It allows businesses to gain access to top talent who are experienced and skilled, resulting in faster onboarding times and less time spent on training and development, which is crucial in a fast-paced hospitality environment.

At Ginger Hospitality, our recruiters come from hospitality backgrounds, so we understand the unique challenges of the industry. Our experienced team can provide temporary staffing solutions to businesses of all sizes and accolades and across all sectors of the hospitality industry. Whether you need temporary staff for a one-off event or a longer-term assignment, we’ve got you covered.

The Ultimate Guide to Michelin Stars: How to Earn, Keep, and Benefit from Michelin Recognition in the Hospitality Industry

The Michelin guide has been an integral part of the hospitality industry since it began in 1900. Now, the guide rates over 30,000 establishments in over 30 territories across three continents, with more than 30 million Michelin Guides sold worldwide since. As the Michelin guide rose in popularity, by 1931, 3-star accreditation was added, each star meaning the following (which remains the same to this day): one star means the food is good, two means it is worth a detour, and three stars means it is exceptional. We’ll be taking a deep dive into how to gain a Michelin Star, what the company values in a restaurant, and how you could earn one for yourself.

What are The Michelin Guide’s Core Values?

  • Inspectors prioritize anonymity to ensure no special treatment is given.
  • Michelin Inspectors are independent and only employed by Michelin.
  • Inspectors are experts in the hospitality industry with many years of experience.
  • Michelin Stars are given by a collective of inspectors who visit the establishment multiple times to ensure
  • Inspectors are passionate about food and have experience working in the hospitality business.
  • Any high-quality restaurant meeting the 5 rating criteria can be reviewed by Michelin.

What are the 5 criteria you must meet to achieve a Michelin Star?

Quality Products:

  • Chefs should seek out the best ingredients, even if they have to travel for them
  • Premium ingredients aren’t necessary for Michelin recognition
  • Making simple dishes stand out can also catch the attention of inspectors

Mastery of Flavour and Cooking Techniques:

  • Chefs should balance showcasing ingredients with practicality for sustainable business
  • Attention to detail and good cooking techniques are crucial
  • Texture and flavour categories should be considered in dish design

Personality of the Chef in the Cuisine:

  • A chef’s personality can be expressed in their food, but should cater to customers’ preferences
  • A culture of experimentation can help organizations bring personality to their restaurants

Value for Money:

  • A memorable experience and wow factor are more important than price
  • All restaurants should focus on making customers happy and treating them equally

Consistency of Food:

  • Lack of consistency can result in loss of stars
  • Inspectors visit restaurants multiple times with different inspectors before making a decision
  • Cooking technology can help, but craftsmanship and human touch are crucial
  • The number of covers doesn’t necessarily affect a restaurant’s chance of Michelin recognition

Who holds the most Michelin Stars?

Joël Robuchon, 31 Michelin Stars

Joël Robuchon, the world’s best chef according to Michelin star ratings, held a record-breaking 31 Michelin stars at one point, and was named “Chef of the Century” multiple times. He specialized in French cuisine, owned 12 restaurants, and mentored renowned chefs such as Gordon Ramsay. Though he passed away with 28 stars, his legacy lives on.

Alain Ducasse, 21 Michelin Stars

Alain Ducasse is one of the world’s most successful chefs, having earned and maintained 21 Michelin stars throughout his career. He is the proud owner of 3 Michelin-starred restaurants, with a total of 34 worldwide. Ducasse is well-known for his delicious French cuisine, and his meals have even been enjoyed by astronauts in space.

Gordon Ramsay, 16 Michelin Stars

Gordon Ramsay, known for his TV appearances and fiery personality, has 16 Michelin Stars. He owns almost 20 restaurants, with the most popular being his main Chelsea restaurant, which has held 3 stars for 18 years.

Martin Berasategui, 8 Michelin Stars

Martin Berasategui is the world’s top Spanish chef with 8 Michelin stars. Two of his ten restaurants are triple Michelin-starred hotels, including the Martin Berasategui Restaurant. He specializes in Basque cuisine and his cooking is considered an art.

Behind the Scenes with Bob: A Chef’s Journey to Creating a Culinary Haven at The Rum Fox

Exciting news! Our team was fortunate enough to pay a visit to the hottest new restaurant in town, ‘The Rum Fox’ located in Grindleton. Despite being a recent addition to the industry, this establishment has already made waves, and we’re thrilled to announce that we’re chatting with none other than Bob, the Chef Patron himself! From locally sourced ingredients to seasonal produce, Bob and his team have left no stone unturned in creating a dining experience that is truly unforgettable. It’s no wonder that The Rum Fox is quickly becoming the go-to spot for foodies and locals alike. We’ll be discussing the challenges Bob faced when opening the pub, what his ambitions are and what customers can expect from the menu.

So, Bob…

What made you choose the former Buck Inn to become The Rum Fox and where did the name come from?

I had been looking for a freehold pub for a while and when I saw The Buck Inn was up for sale, I thought it was the perfect site. Having previously worked as the Head Chef at The Duke of York in Grindleton, I was already familiar with the village and its locals. However, with numerous ‘Bucks’ scattered throughout the Ribble Valley, I knew that a name change was necessary.

I wanted a name that would stand out, something unique that had not been used before. Since the area was well-known for game, I brainstormed a list of names that would complement the theme. After careful consideration, we landed on The Rum Fox, and it immediately stood out from the rest. With a name like that, I knew we were onto something special.

What challenges did you face when it came to renovating The Rum Fox?

When we purchased the pub, it had been closed for several years and was in a bad way. We knew that a complete overhaul was necessary, and so we made the decision to gut everything and start from scratch. In fact, the only original feature that remains is the front door!

In addition to the main building, there were a few outbuildings at the back that were underutilized and didn’t serve any purpose. So, we decided to demolish them and utilize the extra space to build a stunning restaurant area. By doing so, we were able to free up more room in the bar area for guests to enjoy drinks and socialize.

Obtaining planning permission for these renovations proved to be a challenge, causing a delay in our opening. But now, with everything in place, we’re excited to welcome guests to our revitalized and vibrant pub!

What are your ambitions for the restaurant, will you be working towards gaining any accolades?

Our primary goal for the pub is to ensure that it’s bustling with activity. However, we firmly believe that the foundation for achieving this is by prioritizing the delivery of exceptional food and service. Anything that follows is simply an added bonus!

What can customers expect from your menus?

Our menus will be an exciting fusion of both pub and restaurant-style cuisine. Whether you’re in the mood for a pie and pint or a more indulgent tasting menu paired with wines, we’ve got you covered! We’ll be tailoring our menus to the seasons and incorporating the freshest and most exceptional produce available locally.

Our aim is to not only provide you with the highest quality food and drink, but also to surprise you with unique flavour combinations and unexpected twists. From seasonal favourites to local specialties, we’ll be offering a dining experience that is nothing short of extraordinary.

What has been the feedback from the local community since starting on The Rum Fox journey?

We’re thrilled to report that our opening week has been nothing short of incredible! The feedback from our customers has been overwhelmingly positive, and we’ve been bustling with activity every day. The bar and Garden Room have been packed with guests, while every table in the restaurant has been booked out.

We’re particularly delighted to hear that the locals are thrilled to have a new pub in the village, and the feedback we’ve received from them has been exceptional. It’s incredibly rewarding to see the community embracing our establishment, and we look forward to continuing to provide them with an excellent dining and drinking experience.

And finally… Will there be a lot of options for Rum?

Yes! We’re currently in the process of building up an interesting range of Rums for the bar. Watch this space!

It’s clear from our chat with Bob that The Rum Fox is a culinary destination not to be missed. With a focus on using locally sourced and seasonal ingredients, Bob and his team are creating menus that surprise and delight diners. The feedback from the local community has been overwhelmingly positive, and it’s no surprise that The Rum Fox is quickly becoming the go-to spot. With plans to build up an interesting range of rums for the bar, there’s no doubt that this establishment will continue to make waves in the industry. We can’t wait to see what the future holds for The Rum Fox and wish Bob and his team all the best!

12 of the best British pubs to enjoy this weekend

The rallying cry to the nation’s pub-goers and landlords has come from an unlikely source this week, as chancellor Jeremy Hunt declared in Wednesday’s Budget: “British ale is warm, but the duty on a pint is frozen.”

It is no doubt good news for the industry which, like every other, has had to weather the pandemic and energy crisis storms of recent years. The duty on draught beer pulled from a British tap will be up to 11 per cent lower than that sitting on supermarket shelves from August, in an attempt to encourage more punters to crowd around the bars of their local boozers.

Whether to unwind at the end of the working week, enjoy a Sunday lunch after a brisk walk, or watch the home nations play rugby on the big screen, here are 12 of the best pubs across the country to visit this weekend:

The Unruly Pig, Woodbridge, Suffolk

Voted the best British gastropub in 2022, the Unruly Pig revels in good food and quirkiness. After a disastrous fire which forced its closure in 2015, the year it opened, the Suffolk bolthole now has a cult following and has featured on innumerable “best of” lists for its food. Enjoy your favourite tipple alongside seasonal British fare with an Italian influence, either amongst its eccentric artwork or in the pub garden.

The Unruly Pig, Orford Road, Bromeswell, Nr Woodbridge, Suffolk, IP12 2PU

The Cow, Dalbury Lees, Ashbourne, Derbyshire

The cow-themed furnishings throughout this Derbyshire inn, including quaint milk churn turned-bar stools, add to the charm of this elegant pub. On the southern edge of the Peak District, the pub, seafood restaurant and 12-bedroom guest house feature exposed wooden beams and brickwork, staying true to the origins of the tavern.

The Cow, The Green, Dalbury Lees, Ashbourne, Derbyshire DE6 5BE

Spaniards Inn, Hampstead, London

Tired after a long walk with the dog across the Heath? The 16th century institution is just across the road in this leafy suburb of north London, and has an illustrious history. It’s mentioned in Charles Dickens’ The Pickwick Papers, and is allegedly where poet Keats wrote ‘Ode to a Nightingale’. Oh, and highwayman Dick Turpin’s father was once the landlord. Today’s punters can warm up with a stiff drink by one of the tavern’s cavernous fireplaces, and enjoy a Sunday lunch in the wooden-panelled rooms upstairs.

Spaniards Inn, Spaniards Road, Hampstead, London, Greater London, NW3 7JJ

The Blind Monkey, Sheffield

This pub, located in S6, is a bit of a trek from the centre of Sheffield, but is well worth the visit. Built in 1846, it started life as a grocery shop where customers could buy bottled beer which they could later refill. Now it’s a dark-wood panelled, stained glass window gem that offers a range of Don Valley beers, hand-crafted in the region.

The Blind Monkey, 279 Whitehouse Lane, Walkley, Sheffield, S6 2WA

The Pear Tree, Edinburgh

With Scotland playing Italy in the Six Nations this weekend, many rugby fans will likely feel drawn to the biggest outdoor screen in Edinburgh, which is perched in the garden of this historic pub.

Housed inside an 18th century building once visited by Rabbie Burns, The Pear Tree has an unpretentious, good-time vibe perfect for enjoying the sport and a pint of Guinness. The two eponymous pear trees, now 170 years old, still flank the pub’s entrance.

The Pear Tree, 38 W Nicolson Street, Edinburgh EH8 9DD

The Star Tavern, Belgravia

This Belgravia institution is one of only five pubs to appear in every edition of the Good Beer Guide, and counts Diana Dors and Peter O’Toole among its clientele in its fifties and sixties’ heyday. It is also supposedly where the Great Train Robbers conspired to steal millions from a Royal Mail locomotive in 1963. The thrill of this historic pub today lies in its great selection of Fullers beers and cosy atmosphere in the heart of SW1.

The Star Tavern, 6 Belgrave Mews West, Belgravia, London, SW1X 8HT

The Felin Fach Griffin, Brecon, Powys, Wales

Sitting between the Black Mountains and the Brecon Beacons, this gastropub was the first in Wales to win a Michelin Bib Gourmand. The beers here are sourced from local breweries, and the pub has as many as four real ales on tap on a constantly revolving basis to discover and promote new regional tipples.

The Felin Fach Griffin, Felin Fach, Brecon, LD3 0UB

The Eagle, Cambridge

Located right in the heart of Cambridge, The Eagle is the second-oldest pub in the town and is known as the place where Francis Crick announced the discovery of DNA.

The pub is also home to the ‘RAF bar’, so-named because of the Allied airmen who would graffiti on the ceiling with wax candles, petrol lighters and lipstick. The pub has a small outdoor seating area which spills onto the cobbled street of the alley at its side.
