Albatross Death Cult – Birmingham
Alex Claridge, known for his avant-garde approach at The Wilderness, is launching a new venture, Albatross Death Cult, in Birmingham’s Jewellery Quarter. Set in a Grade II listed warehouse, this unique dining experience will seat 14 guests around a monolithic kitchen counter. The tasting menu, featuring 12 or more dishes, will predominantly focus on seafood and coastal ingredients. Claridge’s “brutalist” style will see ingredients like mackerel used in multiple ways, such as fresh sashimi and a clarified smoky dashi.

Korean chef Akira Back opens his namesake restaurant at the Mandarin Oriental Mayfair in London. Niall Keating, after leaving Luna in Staffordshire, is set to open Tender at the Stock Exchange Hotel in Manchester.
